Purple Marble Loaf Bread
How to make this soft and fluffy Purple Marble Loaf bread made of sweet potato.
Here's what you'll need:
200 grams purple sweet potato (boiled and cooked until fork tender)
DOUGH:
1 cup milk (250ml)
1 egg
3 tbsp sugar (45g)
1 and ½ tsp instant yeast (5g)
3 cups bread flour (375g)
1 tsp salt (5g)
3 tbsp unsalted butter (42g)
1. Boil about 200 grams purple sweet potato until fork tender.
2. Mash until smooth. Set aside.
3. In a bowl, mix together milk, egg, sugar and yeast.
4. Add flour and salt.
5. Mix until dough is formed.
6. Add butter and mix until fully absorbed.
7. Knead until smooth, about 5 to 7 minutes.
8. Divide dough into two portions.
9. Smooth into ball. Place in a bowl with oil and cover to proof.
10. Add mashed sweet potato the remaining dough. Knead until incorporated.
11. cover and let it rise until doubled in size.
12. Punch air out. Roll out both and place purple dough on top.
13. Pressing to seal. Then roll tightly into a log.
14. Place in a 9x5x4 inches loaf pan.
15. Cover and let it rise for 30-40 minutes. Preheat oven at 340F or 170C.
16. Bake in a preheated oven for 35-40 minutes.
17. Let it cool down completely.
18. Serve and enjoy!

I made this recipe today with my sister and we both loved the dinner rolls! I had to use more flour since I was kneading by hand and the dough was sticky after a few minutes. I'll definitely keep this recipe and share with my mother.

This is a simple tips when you make an overnight dough. You can pre-made the dough by using cold water then simply refrigerate your dough-bread right after as it can slowly proof inside the regenerator then make sure you to have it at room temperature for at least an hour before baking and there you can have a fresh delicious dread in the morning for breakfast! Take note if you simply leave it at counter top room temperature your dough will collapse as it will over-rise due to the presence of yeast.

The recipe was soo sooo simple and so good to make! I actually whipped the butter until it turned pale with a hand whisk. And then continued whipping it while adding sugar and eggs! The batter turned so pale and fluffy it was lovely to work with and the cookies were sooo gooddd!!
